Ingredients:
1 1/2 cups (about 10 oz.) dried black beans, sorted and rinsed
5 cups water
2 tablespoons extra-virgin olive oil
1 1/2 cups chopped onion
2 pressed garlic cloves
1 lb. ground lean turkey
2 stalks celery, cut into 1/4-inch slices
1 large green bell pepper, chopped
1 can (28 oz.) diced tomatoes with juice
1 can (8 oz.) tomato sauce
1 can (6 oz.) tomato paste
1/4 cup water
2 tablespoons chili powder
1 teaspoon red pepper flakes
Grated cheddar cheese and chopped green onions, optional
Directions:
- Wash and sort beans. Place beans in 5-qt. or larger pressure cooker. Cover with water; lock lid in place. Bring pressure to second red ring over medium-high heat. Adjust to stabilize pressure at second red ring. Cook 8 minutes. Remove from heat; allow pressure to drop naturally. Release steam; drain beans discarding liquid. Set beans aside; clean cooker.
- Heat oil in cooker over medium-high heat. Saute onion and garlic using Easy-Squeeze Garlic Press until tender 2 to 3 minutes. Add ground turkey and cook until brown, stir to break up meat. Add celery, bell pepper, tomatoes, sauce, paste, water, chili powder, salt, cooked beans and pepper flakes; stir to combine.
- Lock lid in place; bring pressure to second red ring over medium-high heat. Adjust heat to stabilize pressure at second red ring. Cook 10 minutes.
- Turn off heat; allow pressure to drop naturally. Remove lid, tilting it away from you to allow steam to escape.
Top each serving with grated cheese and onions, if desired.
